Roasted Garlic Tips

Squeeze it onto oiled toast and float the toast on top of soup. Variations: Add a sprig of fresh thyme or rosemary to the package, especially if you plan to use whole heads of garlic as an accompaniment to a roast or on crusty bread. Squeeze out 6 whole roasted heads of garlic into 1/4 cup mild olive oil. Add 2 rounded tablespoons of bottled mayonnaise and pulse in the food processor until smooth and creamy. (This may take longer than you expect.) The result is a fantastic, unctuous concentrate that you can keep in the refrigerator for seasoning, sauces, and salad dressings anytime a smooth, sweet, intense garlic flavor would be appreciated.
