Directions
In a small bowl combine all ingredients but the salmon. Toss lightly with a fork until the mixture is moist and blended. Cut a pocket in the salmon as large as possible without cutting through the flesh. Fill the cavity of the fish loosely with the stuffing mixture. Close opening with toothpicks. Heat non-stick skillet over medium heat. Add tablespoon of oilve oil. Saute fish about 4 or 5 minutes per side, flipping carefully. Hint: insert knife into the stuffing and touch to your lips to be sure it has been heated through. If its more than you can stand, its done.
