Directions
Preheat broiler to high. Line sheet pan with foil or parchment
Arrange the tomatoes, peppers and onions on pan skin side up. Broil until skins start to char and shrivel, about 10 to 12 minutes or until they are soft.
Transfer half to a blender or food processer. Add oregano and cilantro. Process until chunks small but noticeable. Keep some hot peppers aside and test heat before adding them in to 2nd batch along with anything else to balance flavors.
Add remaining ingredients
If canning, fill jars with proper headspace. Process in boiling water bath for 20 minutes.
