Spanish Rice - Mine based on Genius Kitchen

Directions

Saute onion and celery in oil over high heat just still starting to brown

Add rice and brown. Add garlic and spices

Add tomato sauce and chicken broth. Bring to a boil, reduce heat to simmer. Cover and cook for 15 mins.

Instant Pot: Turn off saute mode, close the lid to the Instant Pot, and lock the lid. Cook on high pressure for 5 minutes. Once the timer goes off, allow the pot to sit for 5 minutes before doing a quick release.

8/25/24: Made for Johnnys lunch. Upd the onion from 1/2 c to 1 c, upd garlic from 1 t to 1.5 t. Added tomatoes.
