Warm Apple-Lemon Sauce (see recipe on page 138) Position rack in center of oven and preheat to 350°F. Spray 10-inch tube pan with vegetable oil spray. Lightly flour pan, tapping out excess flour. Combine flour, crystallized ginger, ground ginger, baking soda, ground cloves and salt in medium bowl. Using electric mixer, beat molasses, oil, sugar and egg in large bowl until well blended. Gradually beat in flour mixture. Pour in boiling water and beat on low speed until well combined. Pour batter into prepared pan. Bake until sides of cake begin to pull away from pan, cake is firm to touch and tester inserted into center comes out clean, about 45 minutes. Cool on rack 5 minutes. Run small sharp knife around sides of cake to loosen; turn out cake onto rack and cool. Serve warm with apple-lemon sauce if desired. Serves 14.
