Steamed Pudding, Whipped Cinnamon Sauce ?

Directions

Position knife blade in food processor bowl; add bread cubes. Process 30 seconds or until cubes become fine crumbs. Sprinkle crumbs on an ungreased baking sheet; bake at 250° for 7 minutes or until lightly browned. Combine crumbs and next 6 ingredients in a large bowl; stir well, and set aside. Combine pears and next 8 ingredients in a bowl. Combine fruit and flour mixtures, stirring well. Beat egg whites (at room temperature) until stiff peaks form. Stir one-fourth of beaten egg whites into flour mixture; fold remaining egg whites into flour mixture Spoon into a 6-cup metal mold coated with cooking spray. Cover tightly with aluminum foil. Place mold on a shallow rack in a large stockpot; add boiling water to halfway up sides of mold. Cover and steam over boiling water 1-1/2 hours, adding additional water as needed. Invert mold onto a serving platter; serve warm with Whipped Cinnamon Sauce. Yield: 16 servings (serving size: 1 slice pudding and 1 tablespoon sauce).
