Stir Fried Orange Beef ?

With paring knife or zester, remove peel from oranges in thin strips; discard white pith and set aside strips of peel. Section peeled oranges and set aside. With sharp knife, cut round steak along grain into 2 -inch-wide strips. Thinly slice meat across grain into 1/4-inch-thick slices. In shallow dish, combine meat, 2 tablespoons orange juice, soy sauce, 1 tablespoon cornstarch and 1 teaspoon brown sugar; stir to combine and set aside. In small bowl, combine chicken broth and remaining orange juice, cornstarch and sugar. In large nonstick skillet over medium-high heat, heat oil until hot, but not smoking. Add sliced meat and marinade; stir-fry 3 to 4 minutes, or until browned but still slightly rare. Remove meat from skillet and set aside. Add ginger, garlic, strips of orange peel, broccoli, green onions, water chestnuts and chicken broth mixture. Stir-fry 2 to 3 minutes, or until vegetables begin to soften. Add cilantro and browned beef (including any accumulated juices); cook 2 to 3 minutes, or until sauce thickens slightly, stirring constantly. Stir in orange sections and serve immediately. Serves 6.
