Sugared Pecans - Mary's

Directions

Preheat oven to 300°F. Prepare cookie sheet with silpat liner. Mix dry ingredients in small bowl. Beat egg whites and water until almost stiff. Add vanilla and caramel flavoring in largel bowl until frothy. Dump nuts into egg white mixture coating nuts well. Stir in sugar mixture and mix until well coated. Spread out on baking sheet, separating into single nuts where possible. Bake at 300 for 20 minutes. Turn oven off and let set for 15 minutes more or until coating is dry. Remove from oven. Cool on baking sheet then transfer to bowl when cool enough to handle.

Note: Seems like too much egg white in this recipe. Try less next time. This recipe above raised the pecans from 8 to 10 ounces. Also raised sugar from 1/3 to 1/2. I havent yet tried these changes.
