Super Juice - Grapefruit - Mary's

Peel the grapefruit, weigh the peels, and put them in a jar with the calculated amounts of citric acid, malic acid, and MSG. See the formula above. Muddle well then shake well and leave it at room temperature for up to two hours. This will give you "oleo citrate" which will give our juice acidity and a very potent grapefruit flavor. Juice the grapefruit and set aside. Transfer the oleo citrate (including the peels, of course) to a blender add sugar and reserved grapefruit juice Blend for half a minute then strain through a nut milk bag or cheesecloth. Add the water through same cheesecloth. Make sure to rinse inside of a jar with water to get out all of the oleo citrate. Bottle the Super Juice, keep it in the fridge, and use it within a week for best results. Try it in Tiki drinks, the Brown Derby, the Hemingway Daiquiri, the Paloma, or your other favorite sour cocktails.

38 Organic grapefruit (2 large made 76g of peels so 1 should be enough) 30 Citric Acid - 0.8 × weight of peels Citric acid too prominent.
