Swiss Apple Pie

Directions

1. Arrange apple slices in partially baked pastry shell; set aside. 2. Beat eggs and egg yolks slightly. 3. Add cream and 1/2 cup sugar; blend well. 4. Pour 1/2 egg mixture over apples. 5. Bake at 350 degrees for 30 minutes. 6. Pour remaining mixture over pie; bake for 45 minutes or until a knife inserted in the center comes out clean. 7. Remove from oven; pour melted butter evenly over the top of pie. 8. Sprinkle with 1/4 cup sugar. 9. Return to oven for 5 minutes. Cool before serving. Crisp Crust: 1. Cut butter into flour until particles are fine. 2. Sprinkle with water; tossing lightly until mixture holds together. 3. form into a ball. 4. Roll out on lightly floured pastry cloth to 1/8 thickness. 5. Fit into pie plate; trim and flute. 6. Sprinkle pastry shell with almonds and bread crumbs. 7. Bake at 350 degrees for 5 minutes. Cool.
