Tapioca Pudding-Mary's based on Alton Brown, 2004

Directions

Soak tapioca in water in saucier or sauce pan for at least 30 minutes...or longer. Do not drain. Add milk, sugar, vanilla bean (including pods), salt and lemon zest. Bring to boil, reduce to simmer for 20 minutes stiring often. Fish out vanilla bean pods. Add cream and stir. Simmer until smooth. Cool with plastic pressed on surface. Serve room temp or cold. Makes 8 of the 4 or 5 oz deli cups
