Preheat the oven to 350 F. In an 8-inch cast-iron or other ovenproof skillet, place all the ingredients except the pastry. Stir over low heat until the liquid turns syrupy and deep amber; do not burn. Set aside. On a lightly floured surface, roll out the pastry 1/8 inch thick Cut out a 9-inch circle of pastry. Place the pastry over the apples and tuck in the edges. Place in the oven and bake for 30 to 35 minutes, or until the pastry is puffed and golden brown. Preheat the broiler. Immediately invert the tart onto a cookie sheet and place it under the broiler for 3 to 5 minutes, watching constantly, until the apples bubble and brown.
