Salt and pepper to taste
1. Take a couple of paper towels and soak up excess moisture from shrimp. Season lightly with salt, pepper, 2 tablespoons of lime juice and 2 tablespoons of olive oil. Keep refrigerated until ready to use.
2. Preheat 3 tablespoons of olive oil to medium-high heat for about 3 to 4 minutes. When nice and hot, add the chile serrano and garlic and stir often, so garlic doesnt burn. Cook for 1 minute. Add the shrimp cook until shrimp just starts to turn pink, about 2 minutes.
3. Add the lime juice, tequila, hot sauce, pinch of salt and pepper, stir well to combine, and taste for salt. Cook for just another 1 to 2 minutes. Garnish with chopped cilantro before serving.
4. Serve the shrimp and ladle some of the cooking liquid over the top. Shrimp is great over rice or on tostadas or crusty bread.
