Thanksgiving Timetable

Up to Three Weeks Ahead (11/9): X Bake and freeze Potato Rolls X Make turkey stock and freeze - DONE

One to Two Weeks Ahead (11/16): X Order fresh turkey (12-14 pounds) X Shop for nonperishable food. Plan table settings, centerpiece and turkey-platter garnishes, etc.

Saturday Before Thanksgiving (11/23): Bring out china, serving dishes and utensils. Polish silver. X Prepare Cranberry-Apple Relish

Monday Before Thanksgiving: X Shop for perishable food. X Put frozen turkey in refrigerator to thaw. Bake yams for Candied Yams.

Tuesday Before Thanksgiving: X Buy fresh turkey. X Prepare bread for stuffing...cube and toast. X For stuffing, chop onions, celery and parsley. Bag in ziplocks and refrigerate. Toast flour for gravy. Bag and refigerate.

Day Before Thanksgiving: Make Gravy through Step 5. Refrigerate. X Take turkey stock out of freezer and put in refrigerator. Set dinner table.

Perform mis en place tasks, including: X Measure and set out spices. X Set out roaster, rack and foil tent X Prepare oven racks

Thanksgiving Day X Thaw turkey stock on stove by simmering. Add additional turkey parts if any. Bake or steam yams for Candied Yams X Saute onions and celery for dressing. Prepare dressing. X Stuff turkey and spoon extra stuffing into baking dish. Start roasting turkey so it will be done 45 minutes before dinner. (Check Turkey Roasting Chart.) Make Caramel Apple Steamed Pudding X Remove Potato Rolls from freezer. Place wrapped in serving baskets and thaw at room temperature. Cut kernels from corn ears, puree 1 cup, set aside Peel and cut potatoes. Cover with water. Chop fruit for fruit salad Whip cream for fruit salad and pies

2 Hours Before Dinner: Boil potatoes for mashed potatoes Finish corn pudding Finish fruit salad Dust apple cake with confectioners sugar. Set up beverages. Fill cream pitcher (for coffee) and refrigerate. Put butter in serving dish. Uncork wine

45 Minutes Before Dinner: Put turkey on serving platter. Cover lightly with foil. Bring butter to room temperature. Put sweet potatoes on top shelf of oven to reheat. Heat prepped gravy. Add turkey drippings.
