Traditional Scottish Oat Scones

Directions

Combine raisins and boiling water; let stand 10 minutes. Drain well; set aside. Position knife blade in food processor bowl; add oats, and process until fine. Combine oats, flour, and next 3 ingredients in a medium bowl; cut in margarine with a pastry blender until mixture resembles coarse meal. Add raisins; toss well. Combine milk and egg. Add to dry ingredients; stir just until dry ingredients are moistened. (Dough will be sticky.) Turn dough out onto a lightly floured surface; with floured hands, knead 4 to 5 times. Divide dough in half; pat each half into a 7-inch circle on a baking sheet coated with cooking spray. Cut each circle into 6 wedges, cutting to but not through dough. Bake at 400° for 12 minutes or until golden. Serve warm. Yield: 1 dozen (serving size: 1 scone).
