Directions
In large non-stick skillet, over medium-high heat, sauté turkey sausage, breaking up until no longer pink.
In medium bowl, combine sausage, corn muffin mix, chives, pepper, cheese and corn.
In small bowl, combine milk and egg substitute. Add to sausage mixture, stirring until just blended.
Coat 2-inch muffin tins with vegetable spray (or line with paper liners). Evenly spoon mixture into each of the 12 muffin cups.
Bake at 400ºF for 18 to 20 minutes or until toothpick, inserted in center of each muffin, comes out clean.
