Twice-Baked Potatoes from Trisha Yearwood - Mary's

Directions

Preheat the oven to 400 degrees F.

Wash potatoes and pierce with a fork. Rub with the olive oil or bacon grease and sprinkle with salt. DO NOT WRAP IN FOIL Place them on a rimmed cookie sheet. Bake for one hour, or until done, about 99 degrees internal. Remove from the oven and cut them in half lengthwise. Set aside to cool enough to handle. Reduce the temperature of the oven to 350 degrees F.

Scoop out the potato flesh into a large electric mixing bowl. Microwave garlic and butter in measuring cup ahead of time. In medium bowl mix milk, sour cream, half the cheese, and salt and pepper. Add potatoes and milk garlic mixture. Beat until smooth. Divide the mixture evenly and spoon it back into the potato shells. Top with reserved cheese Return the potatoes to the oven for 15 minutes. Remove from the oven and garnish with the bacon and green onion.
