Pineapple Part: Melt 4 Tbsp. butter in iron skillet; add brown sugar and stir until melted. Add pineapple (or apricots or peaches) Sift flour once, measure, add baking powder, and sift again. Cream butter thoroughly, add sugar gradually and cream together until light and fluffy. Add egg; then flour, alternately with milk, a small amount at a time. Beat after each addition until smooth. Pour batter over brown sugar pineapple mixture. Bake in moderate oven (350 degrees) 30 minutes.
