Worcestershire Sauce - Mary's

Ingredients (scaled)

Directions

Dump all ingredients into a large saucepan. Simmer for 2 hours. Cool.

Put in large jar and let it sit 2 weeks out of the fridge. Shake once a day.

Strain into a bowl. Then filter through a fine sieve. Refrigerate or can it.

* I used 4 oz of frozen tamarind fruit pulp in this batch. Probably too bland. Try the concentrated paste next time.
