Directions
In a large bowl, whisk the dry ingredients. In a small bowl, whisk the wet. Stir into dry ingredients gently just until moistened. Fold in add-ins.
Transfer to 2 loaf pans coated with cooking spray. Bake at 325° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Yield: 2 mini loaves (9 slices each).
Notes: This recipe, as written, was too fluffy. Maybe drop down to only 1 egg like the original. dried cherries were barely noticeable. Nix
