Zucchini-tomato Skillet

about 30 minutes before serving: In 10-inch skillet over medium heat, heat butter or margarine, brown sugar, mustard, and salt until butter is melted. Add zucchini slices; over high heat, beat to boiling. Reduce heat to medium-low; cover and simmer 20 minutes or until zucchini is tender, basting occasionally with liquid in skillet. Slice tomatoes; cut each slice in half. Tuck tomato slices among zucchini slices; heat through. Makes 6 accompaniment servings. 100 calories per serving. veg 8
