Preheat oven to 350°F. Generously grease 10-inch Bundt pan. In large bowl, with mixer at medium speed, beat sugar and eggs 5 minutes, occasionally scraping bowl with rubber spatula; slowly beat in salad oil until well blended. Reduce speed to low; beat in flour, baking soda, salt, cinnamon, and vanilla extract; beat until mixed, occasionally scraping bowl with rubber spatula. With spoon, stir in apples, raisins, and 1 cup walnuts. Spoon batter into pan. Bake 1 hour and 10 minutes or until toothpick inserted in center of cake comes out clean. Cool cake in pan on wire rack 10 minutes; remove cake from pan; cool completely on rack. Prepare Apple Glaze. Spoon glaze over cake, letting some run down side. Sprinkle glaze with remaining 1/4 cup walnuts. Makes 16 servings. About 450 calories per serving. APPLE GLAZE: In medium bowl, stir 1-1/3 cups confectioners sugar and 2 tablespoons apple juice or water until smooth. dess 16
