BISCUIT DOUGH: 2 cups all purpose flour 7 tablespoons sugar 4 teaspoons baking powder 1/4 teaspoon salt 6 tablespoons (3/4 stick) cold unsalted butter, cut into pieces 1/2 cup raisins 1 cup whipping cream Bourbon Vanilla Ice Cream (see recipe on page [get recipe]**) Filling: Position rack in center of oven and preheat to 400°F. Butter 13x9x2-inch glass baking dish. Place apples in large bowl; sprinkle with lemon juice Combine sugar, flour, cinnamon, allspice, nutmeg and salt in bowl. Sprinkle over apples and toss until dry ingredients are moistened. Arrange apple mixture evenly in prepared pan. Pour juice over. Bake until apples are hot and bubbling, about 30 minutes. Meanwhile prepare biscuit dough: Combine flour, 5 tablespoons sugar, baking powder and salt in large bowl. Add unsalted butter and cut in until mixture resembles coarse meal. Stir in raisins. Gradually add whipping cream and mix just until combined. Remove dish with apples from oven. Reduce oven temperature to 350°F. Using large serving spoon, shape biscuit dough into 12 mounds and drop onto hot apples, spacing evenly. Sprinkle remaining 2 tablespoons sugar over biscuits.
