Beef and Vegetable Crepes

Beat the eggs in a mixing bowl. Add all remaining ingredients but the flour. Blend well. Gradually add the flour, beating with whisk until smooth. 1 pound ground beef 1/2 teaspoon salt 1/8 teaspoon pepper 2 tablespoons oil 1/2 pound mushrooms, chopped 1 small onion, finely chopped 1 carrot, finely diced 1/2 cup finely diced celery 2 tablespoons finely diced green pepper 1 clove garlic, finely minced 1 10-1/2 oz. can of beef gravy Sprinkle the beef with salt and pepper and brown in a pre-warmed skillet. Remove and discard all but 2 tablespoons of grease. Saute the vegetables and the garlic until just tender. Add the meat and enough gravy to hold it all together. Spoon 3-4 tablespoons onto a crepe, fold and place 2 to a plate. Top with a little of the gravy.
